I am going to try to make some homemade fettucini today, and homemade egg noodles - seems like a good way to use up some of the eggs that my lovely hens lay for me!
I bought a pasta roller and fettucinni cutter attachment for my KitchenAid Mixer. Very heavy, stainless steel, I read the instructions, but I probably need to check out you tube or something to actually see someone using the attachments. Don't want to mess up the pasta! Apparently, I can also use it to make lasagna noodles with!
My good friend, Robin, makes her own ricotto cheese with her goats' milk. Between us, we should be able to make almost entirely home made lasagna when her goats start giving milk in the spring.
I think I might make a loaf of chocolate bread, too. I meant to do that before Christmas, but as usual, I ran out of speed before we had to leave to go visit John's family.

Once you taste your homemade noodles, you’ll never want to go back to store bought! I love them, but making them without a pasta roller/slicer was such a hassle that I didn’t do it very often. I was thrilled to get a pasta machine for Christmas this year, now I never have to go off carbs!

Oooh, Beth, I envy you… Wish I had the time to do the pasta from scratch… Love to cook, can’t find time to do it often enough… I would be waiting for the chocolate bread recipe, too :o)
I love my pasta attachments. Dave bought them for me a few years back. I even have macaroni attachments, but the heavy duty rollers/cutters are the best.
We do get the odd shaped pasta at the store from time to time, but it doesn’t taste the same.
You can also use the flat roller attachment to roll out cracker dough. If you are into things bakery, like artisinal breads, crackers, and goodies, I highly recommend King Arthur Flour’s website.

I think John would like me to also get the attachments that will make macaroni and round spaghetti, and other stuff, But that will have to wait a bit.
In the spring you should sell the homemade pasta noodles and the goat ricotta, I would totally buy those to make my own lasagna. I bought some of your little pumpkins last fall and after my grand daughter painted them and Halloween was over, stuck them in the oven to bake, I then blended them with cooked red lentils to make a full bodied, nutritious pumpkin soup. Next time I get to Leavenworth I will drive out there w/my grand daughter to buy some of your eggs and check out your bunnies.
