So, has anyone tried any of the recipes?

I tried the first recipe on the list, Tammi's Mexican Manicotti. Wow, it was very good. But, it makes a whole lot of food, so John and I will be eating it for several days. I should have saved that one to make when Andy is home from college with some friends! Next time I make it, I'll serve it with guacamole on the side as well as the sour cream that Tammi recommends. It was very easy to make, very economical and very yummy.

I guess I forgot to say that one pan does go a long long way! :)

So glad you liked it, and the guac is a great idea. I forgot to include that too! Oops.

I'm going to try Bou's pork and Teresa's Chicken this week, and am making up my grocery list to cook like a crazy woman next weekend. I plan on feeding the neighborhood! :)

I had left over Mexican Mannicotti for breakfast. It is even better reheated than the first time.

I want to try Boudicca's pork tonight.

It's fun doing all this cooking.

I did Angela's enchilladas and they were wonderful. I substituted tomatilla sauce for picante sauce though. But anyway I had always had trouble with enchilladas coming out dry before and these were excellent. I have leftovers but I predict the enchilladas disappear today.

I've got my eye on that mushroom pork tenderloin recipe for later this week. It looks heavenly to me.

Manicotti here. It was good. Dean and I will be eating it for a week though. Wow, it makes a lot of food!!

Jake is picky and he didn't like it. But his kitten Cuteface did!! She loved it!! Except, I think it gave her gas. Ever smell cat farts before? It was a first for me and it made my 100lb dog's farts smell tame...

I haven't done any yet, although I hope to this week. My printer needs a new ink cartridge (which I NEVER remember until after I get back from the store - sheesh!) and I'm too darn lazy to write out the recipes by hand when I can cut, paste, and print - LOL.

I wasn't able to run out and get the one or two ingredients I needed for ANY of the recipes because of the Typhoon. I'm hoping to do a little shopping soon and start cookin'!

So glad you liked the enchiladas, Calliope, and it sounds yummy with the tomatillo sauce. will have to try that version next time.

Update - I fixed the Chicken and Couscous last night, and it was great and one of the prettiest dishes ever - dark green from baby spinach and bright red from the red pepper.

I made the chicken with 40 cloves of garlic (except that I ran out of time peeling them so it was only 27 cloves). Great stuff!
