Southern Living

I have spent about 11 weeks of the last 6 months here in South Carolina. Every where I go, the people I meet are wonderfully friendly, and I come from a friendly part of the country!

I have even developed a liking for cheese grits. Every morning this week, I have fixed some instant cheese grits for breakfast. They stick with you and really taste darn good.

I hope I can get instant cheese grits in Kansas. If not, I'll have to have one of the folks I'm working with here ship them to me!

You could, of course, simmer real grits, and stir in shredded cheese when they are almost done. I use the fine shred pizza blend, for that yuppie "three cheese" effect. It should, properly, be baked after that, and can be seasoned with garlic or hot sauce, but anyone who would settle for instant probably won't.

A google of - mamalige - produced almost as many hits as a google of - "cheese grits" - so now I'm sitting here (nekkid in my bathrobe) singing "hominy roads must a man walk down..."

That sounds good, but I have never cooked grits from scratch - instant is fine for travelling - I will try your recipe, though, once I'm home for a few days.

Hmmmm. Sounds like I get to try it too, except it will be clouded with this image of a bearded, pony-tailed, hippy-looking type in a ratty bathrobe singing bad pun-songs.

Damn. That image is going to be hard to shake. Thanks for the ear-mite, too. ...the white dove fly, before... aiiiiieeeeeeeeee!
